Disc dehydrator for bringing down the moisture of a 70 kg batch of honey before you bottle it or drum it.
Bees don't always cap at 17 %. On early flows, damp autumns or wet seasons you will find sealed frames above 18 %, the line beyond which osmophilic yeasts have enough water to work. This machine takes that surplus out before the batch becomes a problem in the drum.
01 · HOW IT WORKS
Honey goes into a stainless steel chamber with a rotating disc shaft. Each disc comes out of the mass coated in a very thin layer, and it is on that film —not on the full 70 kg— that the warm air lifts the water. The surface renews with every turn, so there is no need to cook the batch: rotation is slow and steplessly adjustable up to 9 rpm, with a separate temperature control. Honey leaves through a 6/4" stainless steel butterfly gate straight into a honey tank or drum.
02 · PERFORMANCE
Since July 2026 the machine carries a 700 W duct heater with air filter instead of the previous 1,200 W, and a cover with two ventilation openings rather than one. With the second opening the moisture-laden air is renewed better: it dries faster on less power. The manufacturer quotes about 4 percentage points of moisture in 8 hours —from 21 % down to 17 %, say— against 2 points in 12 hours on the 1,200 W version. Treat it as a guide figure: it depends on the honey's starting temperature, the room's temperature and the humidity of the air.
03 · BUILD
The cover is a clear polycarbonate sheet with UV protection on both faces. You can see the level and the film on the discs without lifting it, and every time you don't lift it you don't break the drying atmosphere; the UV protection on both faces is what stops the polycarbonate yellowing and going brittle. Chamber, discs and frame are acid-resistant stainless steel, which stands up to the acidity of honey and to cleaning cycles season after season. The frame runs on castors.
04 · WHEN TO USE IT
You will notice it most on the first spring flows such as oil seed rape, on autumn heather, and on any crop from a damp area or a wet season. Take a reading going in and read again before you discharge — the 8 hours are a reference, not a timer. And be clear about the limit: it removes water, and with that it lowers the risk of fermentation and extends the shelf life of the batch, but it will not recover a honey that is already fermenting, it is no substitute for harvesting ripe, and it does not melt crystallised honey. It works in batches of 70 kg, around 50 litres.
FROM THE APIARY
The water leaving the honey stays in the air of the honey house. Dry in a closed, already damp room and you are evaporating into near-saturated air, and the 8 hours stop being 8 hours: ventilate through the cycle, or put a room dehumidifier in the same space.

⚠ PRECAUTIONS
This is 230 V equipment working in a damp environment: connect it to a protected circuit and keep the electrical area dry.
Do not use it to rescue a honey showing signs of fermentation —bubbles on opening, a vinegary smell, persistent foam—: taking water out does not undo what the yeasts have already done.
Honey is hygroscopic: as soon as the batch reaches the mark, discharge it and close the container. Clean chamber, discs and gate between batches.
