In early spring or late autumn harvests, or during rainy years, it’s common for bees to seal honeycombs with moisture levels above 18 %. If not corrected, this excess can lead to fermentation—especially during warm storage or bottling. The honey dehumidifier helps reduce moisture levels in a safe, controlled way, without compromising the honey’s natural enzymes or aroma.

This model, with a 70 kg capacity, is ideal for stabilizing honey batches before bottling or long-term storage. Its rotating plate and warm-air flow system evaporates excess water gently and efficiently.

Why does honey ferment?

Fermentation occurs when osmophilic yeasts, present in the air and flowers, find enough free water to multiply—typically above 18 % humidity and 20 °C. These yeasts consume sugars and produce acetic acid and carbon dioxide, ruining the batch. The risk increases with immature honey (harvested before full drying) or poor post-harvest hygiene. The dehumidifier offers a reliable solution to avoid such issues before they arise.

How does it work?

Honey is poured into a stainless steel dehydration chamber, where rotating discs continuously spread it into thin layers. A forced-air heating unit circulates warm, controlled air, accelerating evaporation. A built-in sensor ensures temperature never exceeds safe thresholds. Both rotation speed and air temperature are adjusted manually via potentiometers.

Once the target moisture level is reached, honey is discharged through a 6/4” stainless steel butterfly valve for easy transfer to bottling or storage tanks.
