What a honey tank is really for
Although we call them ripeners, in a honey house their main function is to act as settling and resting tanks. The honey already comes ripened from the hive when it's well capped; what we do here is leave it quiet for a few days so that air bubbles, foam, fine wax remains and small impurities rise. That resting helps a lot for the honey to reach bottling cleaner, but it shouldn't be confused with filtering. The filter retains particles; the honey tank lets many impurities rise by density difference and then be removed from the surface. That's why the ideal is usually to work in a chain: extraction, sufficient filtering, resting in the honey tank, de-foaming and bottling.
My advice is to choose the honey tank thinking about the real use you're going to give it: settling, storing temporarily and bottling by hand. I wouldn't buy just by litres. I'd look at food-grade material, lid, stability, working height, ease of cleaning and, above all, the tap. To bottle directly from the honey tank, an anti-drip valve or a clean-cut ball valve changes the experience a lot: fewer stains, better filling control and less time lost between jars. If you work dense or cold honeys, I'd consider a heated model or controlling the ambient temperature better, because a very viscous honey settles worse and flows worse. And here I'll take a clear stand: I wouldn't filter finer than necessary just to leave the honey visually “perfect”. A reasonable filtering cleans the honey without destroying its identity; one that's too aggressive can impoverish it and remove part of the pollen information that helps identify its origin. A good honey tank doesn't fix a badly harvested honey, but it does help you work cleaner, rest it better and bottle with much more professionalism.

Worth saying first of all: a settling tank does not filter by magic. What it does is allow rest and decantation, and that is already plenty.
What happens inside while you wait
Light particles and air bubbles rise and form the foam you skim off the top. Heavier ones settle, depending on their size, the density of the honey, the moisture, the temperature and — this gets forgotten — the height of the vessel: the taller and narrower it is, the better it separates, because the particles travel less horizontal distance.
That is why the tank goes after the filter and before the filler. Filtering removes the coarse material; resting removes what the filter cannot see.
How to choose yours
- Real capacity — food-grade plastic ones start at 28 and 42 kg, and from there you go up to stainless steel and 220 l drums. Size it on one day's harvest, not on the year's.
- Tap — that it is anti-drip and high enough to get a jar or a bucket underneath. A low tap forces you to raise the tank, and that is where stands and lifting trolleys come in.
- Material — food-grade plastic to start with, stainless steel when volume and cleaning justify it. Both work if they are food-grade and actually get cleaned.
The rule you do not skip
Always closed. Honey is hygroscopic: with ambient humidity above 60 % it takes on water, and taking on water means moving towards the risk of fermentation. A tank left open "so it can breathe" undoes the work of the harvest. If the vessel is a drum, the food-grade inner liner costs under €5 and prevents contact and contamination.
What is a honey ripener?
A honey ripener is a vessel, commonly made of stainless steel or food-grade plastic, used in beekeeping to hold honey freshly extracted from the hives. Its purpose is to let wax remnants and other impurities rise to the surface so they can be skimmed off, which improves the honey's quality and clarity.
How long should honey be left to ripen?
How long the honey should stay in the ripener varies with factors such as temperature and humidity, as well as the particular characteristics of the honey.
Broadly speaking, though, it is recommended that the honey stay in the ripener for at least a week, and in some cases up to two. That is the time typically needed for all the impurities to rise to the surface and be skimmed off.
It is worth stressing that once the honey has been extracted and filtered it does not need to "ripen" the way other products do, such as wine or cheese. In this context, "ripening" refers rather to the settling that removes impurities and improves the honey's clarity.
What determines how well honey settles in the ripener?
Generally, within a few days or weeks the honey settles. In this process the impurities rise and can be removed from the top layer. This is known as "skimming" the drums. How long skimming takes, and how effective it is, will depend on:
1) the density of the honey, tied to its moisture (dense honeys settle less readily), and its temperature (the warmer it is, the lower the density)
2) the diameter of the particles (large ones rise to the surface quickly, small ones take longer)
3) the height of the vessel.
