01 · THE SETTLING

Three to seven days depending on the honey

Freshly extracted honey arrives full of bubbles, wax debris and fine particles. At rest, all of that separates by flotation: the light rises and the heavy falls. Fluid honeys, acacia or spring multifloral, settle in about three days; dense ones, heather, eucalyptus or holm oak, want five to seven and a warm room. Before bottling you skim the top layer and draw the honey from the lower tap, which sits above the bottom where what has sunk stays.

02 · WHY STAINLESS

It takes no smells and does not react with honey

A plastic tank absorbs smells between harvests; through stainless steel, eucalyptus, heather and rosemary can pass without their aromas mixing. It does not react with the acidity of honey either, which is between pH 3.5 and 4.5, it does not cloud over the years, and it takes washing with water at 60-80 °C without deforming, which plastic does not. It is food-contact steel and, with a minimum of care, it lasts as long as you want.

03 · THE LID, THE HANDLES AND THE TAP

The details you notice in the honey room

The flat lid with a knob is held by three lever catches spread around the rim: it closes against dust, insects and wax moth during settling and storage. The three handles fold against the body when not in use, so they are out of the way in the wash area, and open out to move the tank, which loaded is around 37 kg and a two-person job. The number 40 guillotine tap comes included: it opens and closes in one movement, without dripping while you change jars.
