Bee Bread Extraction

Bee bread is pollen the bees have stored in the cell, packed down and fermented with their own enzymes and lactic bacteria. It is not the same as trap pollen, and the market prices it differently.

How it differs from pollen

Trap pollen is collected before it enters the hive: the load exactly as it arrives. Bee bread is collected afterwards, already transformed inside the cell. That fermentation changes its texture, its taste — more acidic — and how it keeps.

Why it is expensive to extract

Because it is packed inside the comb and has to come out without bringing the wax with it. That is the whole technical problem, and why the price jump is so large.

Keeping it

It is a live, moist product: fermented, with microbial activity. It keeps chilled or frozen, not on a shelf. At room temperature it moulds.
