01 · THE FILTER

830-870 microns, cut to the opening

It comes with its stainless steel sieve of 0.83 to 0.87 mm, cut to the diameter of the tank, so it sits in place with no adapters and no improvising. It holds back the coarse material — wax, cappings, the odd bee — at the moment of filling, and what gets through is what settling will be able to separate on its own. That is the difference between filtering and straining: the filter takes out what you can see, the rest takes out what you cannot.

02 · SETTLING

What rises, and how long it takes

Once inside, the air bubbles, pollen pellets and wax fragments that made it through the sieve rise to the surface and are lifted off with a skimmer. What is left underneath is the honey you jar. How long it takes depends on the temperature of the room and on the honey itself: some crystallise in weeks and others stay liquid for months, so the honey sets the calendar, not the manual.

03 · THE SLOPED BOTTOM

Built to drain

The bottom is folded and sloped towards the outlet, which is what lets it empty without leaving a pool in the middle. Even so, the last few kilos always take some coaxing: standing it on a table or a stand gains you height for the jar and angle for that final half-kilo. It comes with no legs — the thing most asked for by the people who already own one.

04 · BEFORE YOU BUY

It measures 390 mm across by 790 mm tall and weighs 10 kg empty. Legs and stand are not included, and neither is a clamping ring. If you are after a replacement tap, ask us for the outlet size.
