Details of Dehumidifier Kaskade® for drying wet honey

Cascade dehumidifying kit to bring honey moisture down at low temperature: upper tank with a heating spiral, six perforated plates, a 50 W heat lamp and a dehumidifier running in a closed loop.

Honey does not dry from the inside: it dries from the surface. The whole machine exists to multiply that surface and make the honey pass slowly in front of dry air.

01 · WHEN YOU NEED IT

Above 18 % it starts to matter

Early spring honeys — rosemary, orange blossom — and late autumn ones come from thinner nectars and ripen worse: short days, low temperatures and high ambient humidity. Sometimes the bees cap them with 20 % still inside.

Fermentation comes from osmophilic yeasts that live in the air and on the flowers and need water to get going. The legal ceiling is 20 %, and the real risk starts to count well before that, around 18 %, with a mild room temperature.

02 · HOW IT WORKS

Six falls, and dry air that never meets the room

The honey is loaded into the upper tank, where a heating spiral leaves it fluid enough to run down under gravity. Below sits the cascade: six perforated plates that spread the honey into thin sheets, which is where it actually loses water.

The air circulates in a closed loop over those sheets and returns to the dehumidifier, which takes its moisture out and sends it back dry. No workshop air comes in, and the honey touches no moving part: it falls on its own.

The working rule is counter-intuitive: the slower it falls, the better it dries. If the honey runs too fast, switch both heat sources off — the top spiral and the cascade lamp — and the process improves.

03 · THE HEAT

Little and brief, which is what keeps HMF down

The machine does heat: it has a spiral and a 50 W lamp. What makes that acceptable is not that it stays cold, but that it works at low temperature with short exposure — the honey passes and falls.

That is the criterion to use it by. Turning the heat up to go faster is trading moisture for HMF, which is a legal parameter, and for aroma.

04 · MEASURE BEFORE AND AFTER

Without a refractometer this is done blind

There is no way of knowing how far it has come down without measuring. One reading before loading and another at the end of the cycle is what turns the machine into a control tool rather than a ritual.

The kit handles on the order of 15 kg per half hour of work, so the pace is planned in batches.
