It reaches 70 °C, but honey decrystallises at 40. Every degree you add to go faster you pay for in HMF, and HMF has a legal ceiling.

01 · FORTY DEGREES, NOT FIFTY
Honey granulates because the glucose separates out, and heat dissolves it back. But heat also raises the HMF — hydroxymethylfurfural, the marker that gives away a heated honey and that carries a legal limit — and degrades the honey's own enzymes, which are measured too.
That is why the setting that respects the honey is 40 °C, even if it takes 24 hours for 20 kg. Going up to 50 to finish in 16 is not free: it comes out faster and it comes out worse. The dial reaches 70 because the machine can, not because the honey should.

02 · FIFTY WATTS TO HOLD IT
The element is 500 W, but that is what it draws while climbing. Once the cabinet sits at 40 °C, the wall insulation does its work and consumption drops to 40-50 W.
Do the sum and holding it a whole day is a little over one kilowatt hour. Having liquid honey on hand costs pennies a day; what costs is the first climb.
03 · MEASURE YOUR BUCKET WITH THE TAP
The interior is 570 tall × 530 wide × 390 deep. The maker states capacity for one 40 kg bucket, one of 25, or four of 12.5 kg.
We have been asked exactly this: if your bucket has a tap fitted, measure the whole thing with the tap on and compare it with those 530 mm of width. The bucket usually goes in; what decides is how far the tap sticks out.
The glass door with magnetic catch lets you look in without opening — which over a 24-hour process is worth more than it sounds.
04 · POLLEN WANTS THE OPPOSITE
Change the trays and the cabinet dries pollen: it takes about 10 trays, bought separately, as are the support hooks.
But pollen does not want the dial up: it dries gently, and rushing costs you colour and quality. And take care filling it to the top — the more trays you put in, the less air moves between them and the more unevenly it dries. Fully loaded, you rotate.
05 · THE FAN IS THE DIFFERENCE
The hot-air fan spreads the temperature through the whole volume. Without it, the top overshoots while the bottom never arrives — and in a 40 kg bucket that means overheated honey at the rim and granulated honey in the middle.
The side-wall insulation is what sustains those 40-50 W of holding power. The two go together: one spreads, the other keeps.
