01 · HONEY IS A POOR CONDUCTOR
This is the point that decides whether the job goes well or spoils the batch. Honey conducts heat badly: a point source like this one can be overheating the layer against the element while the centre of the drum is still practically cold and the thermostat shows a reassuring setpoint. That is why time matters as much as temperature here, and why the useful reference is not what the unit displays but the actual temperature of the honey, measured at several points. If the outer zone flows and the centre does not, the answer is never to raise the setpoint: it is to wait, and to stir when the mass allows it.
02 · WHERE TO START
There is no universal setpoint, because the response changes with floral origin, block size and starting temperature. As a reasonable starting point: fine crystals begin to melt from around 28 °C, and at 30 °C most honeys have dropped enough in viscosity to handle well. Coarse crystals call for more energy and, above all, more time — not more degrees. Start moderate, let the heat spread and raise the setting only if it is genuinely needed.
03 · HEATING IS NEVER FREE
Worth knowing before you set anything: even a well-managed heating can add several mg/kg of HMF, and enzyme activity falls with the combination of time and temperature. It does not make the honey bad, but it ages it, and that ageing does not reverse. The practical consequence is twofold: heat only as much as you must and, if you can, only once; and if the process matters to you, test HMF before and after the first time, so you know what your method costs. The unit supplies heat; it does not improve the quality of the honey nor rescue a fermented batch.
NEVER SWITCH ON DRY
Insert the heater without striking the wall or the base and switch on only after checking that the whole heated section is submerged. Never run it dry, and never let the honey level fall below the heating zone during use. When finished, disconnect, wait for the temperature to drop and clean the surface as the unit's instructions set out, without wetting the connection box. Work with the drum on a stable base and a sound 230 V supply.
04 · BEFORE YOU BUY
The 520 mm identifies the working diameter indicated for the drum: check that the interior is clear of taps, ribs or narrowings that would stop it going in centred. The manufacturer's sheet does not allow us to confirm the throughput for 100 kg or the maximum programmable temperature; if those two figures govern your process, ask us before ordering and we will confirm in writing, rather than have you find out with a full drum.
