01 · SENSORY PROFILE
The packer’s sheet describes light amber honey with an intense, persistent aroma. Sweetness dominates on the palate, with slight sharp notes. If broom or heather accompanies the harvest, the honey can be darker and show a saline nuance.
02 · WHAT TO EXPECT FROM THE BATCH
The document confirms Spanish origin, but not a region or particular Eucalyptus species. Weather and accompanying flowers affect colour, aroma and crystallisation.
03 · WHAT ‘RAW’ MEANS HERE
‘Raw’ is the product’s commercial name; it does not mean ‘set’. The packer’s sheet states controlled heating and filtration, so we do not describe it as ‘never heated’. It may arrive runny, creamy or crystallised. Crystals are natural; to soften the honey, warm the closed jar in a water bath, without a microwave or direct heat.
04 · BEFORE YOU BUY
Use it on toast, with yoghurt, in vinaigrettes or alongside cheese. It does not taste like menthol sweets: it is honey only. Keep it closed in a cool, dry place and use dry utensils. It must not be given to children under 12 months.
