Details of Rosemary Honey 20kg

Rosemary is a spring honey, one of the first of the year: harvesting usually begins in late February around the Mediterranean and in April in the colder inland areas.

It tends to be pale in colour, with a restrained aroma carrying camphor and fruity notes, above all retronasally. In the mouth the aromas gain intensity; it is a sweet honey without much else going on. That said, if the bees have worked a secondary flow such as thyme, it can leave acidic notes — or even a glyceric, fat-palate sensation where viper's bugloss (Echium) comes with it.

Supplied in 20 kg buckets, a convenient format for the beekeeper or the heavy user.
