Spanish blossom honey jarred without pasteurisation, in a 900 g jar — the honey of a landscape and a season, not the leftover blend most people assume when they read «polyfloral».

Polyfloral honey carries a reputation it does not deserve. It is not what remains once the monoflorals have been separated out: it is what the bees produce when several plants are in bloom within foraging range and none of them dominates enough to define the batch. That makes it the most honest honey an apiary can give you — it tells you what actually flowered that year, in that spot — and also the most variable: two consecutive seasons from the same apiary can yield two noticeably different honeys in colour and aroma.

🌿 What «polyfloral» actually means

A honey is called polyfloral or blossom honey when it comes from the nectar of several species and none contributes enough for it to be declared monofloral. That is a different category, not a lesser one. In practice the profile follows the landscape and the timing of the harvest — a spring polyfloral from dry Mediterranean country tends to be pale and floral, while a late-summer one from upland scrub comes out more amber and fuller-bodied. Colour and aroma therefore vary from batch to batch, which is exactly what you should expect from a honey that is not standardised.

🍯 Unpasteurised: what that means in the jar

This honey is jarred without pasteurisation. Pasteurising means heating the honey so it stays liquid and uniform on the shelf for months and crystallises later; skipping it means the jar behaves like the beekeeper's own bulk honey. The direct consequence is that it will crystallise sooner or later, and it may do so unevenly within the same jar. That is neither a fault nor a sign of adulteration — it is how honey behaves when it has not been through that treatment.

💡 If it sets, do not bin it and do not boil it

Crystallisation reverses with gentle heat and patience: a water bath with warm water, never boiling, stirring now and then until it flows again. What you want to avoid is the microwave and any sharp blast of heat — they warm unevenly and strip the aroma. Day to day, keeping the jar in a dry cupboard away from the hob and the radiator is enough: honey picks up ambient moisture readily, and that is what actually spoils it.

The jar holds 900 g net and measures 15 × 8.4 × 8.4 cm, so it fits an ordinary kitchen cupboard and handles one-handed.
