01 · SENSORY PROFILE
The packer’s sheet describes reddish amber honey with an intense aroma of autumn leaves, humus and mushrooms. Bitterness and saline notes appear on the palate; accompanying honeydew can make the salty and malty nuances pronounced.
02 · BOTANICAL ORIGIN
The sheet confirms Spanish origin, but not a single species or fixed region. Heather variety, accompanying flora and weather explain why two harvests need not be identical.
03 · WHAT ‘RAW’ MEANS HERE
‘Raw’ is the product’s commercial name; it does not mean ‘set’. The packer’s sheet states controlled heating and filtration, so we do not describe it as ‘never heated’. It may arrive runny, creamy or crystallised. Crystals are natural; to soften the honey, warm the closed jar gently in a water bath, without a microwave or direct heat.
04 · BEFORE YOU BUY
It pairs well with toast, plain yoghurt, mature cheese and nuts. If you prefer very mild honey, its earthy bitterness may be too strong. Keep it closed in a cool, dry place and use dry utensils. This is a food, not a treatment, and must not be given to children under 12 months.
