They are harvested at 1,500 m of altitude in the high mountain natural park of the Sierra Norte de Guadalajara, which borders the Hayedo de Montejo natural park to the south and the Hayedo de Tejera Negra natural park to the north-east.
On the slopes of these mountains the deciduous, lobed oak is an endemic species, and every summer, in July and August, when the acorns on those oaks are the size of a chickpea or smaller, they release a sweet drop that the bees take.
To eat it, cut a small piece off the comb, put it in your mouth, press the wax against your palate, the honey comes out and you enjoy it.
