01 · THE HONEY

Rosemary: very pale, mild and fine-grained

Rosemary honey is among the palest of the peninsula, almost white once set, with a mild floral aroma, a balsamic note and restrained sweetness: it suits those after a fine honey rather than an exuberant one. It crystallises early and in a fine grain, turning creamy: that is its trait, not a fault, and it is why it serves as seed for creamed honey. The floral origin and the area are on the label: monofloral rosemary, Spain. It is honey, not a remedy: it sells on taste.

02 · THE FORMAT

34 jars of 50 g in their tray

Each jar is glass with a metal screw lid and label, and the 34 come set in a cardboard tray that goes as it is on the buffet or is handed out one by one: 1.7 kg of honey in all and about 3 kg of parcel. The 50 g are one breakfast serving, for yoghurt, toast or tea, and the empty jar goes on being useful. For weddings, communions and christenings it can be labelled with name and date: ask us about quantities and lead time.

03 · HOW TO KEEP IT

Cool, dry and out of the sun; creamy is how it comes

Keep it in a cool, dry place away from direct light; the label carries its best-before date. In the jars it may arrive already creamy or slightly grainy: that is normal for rosemary and many prefer it so, because it spreads and does not run. If you want it runny to serve, a very gentle water bath, not above 40 °C, for a few minutes.

04 · WHAT IT GOES WITH

The same tray in orange blossom

The sister tray carries orange blossom honey (2912), more aromatic and liquid for months: on a buffet the two together give a choice, and as a wedding favour they allow two labels. Rosemary goes well with cured cheese, toasted bread and plain yoghurt.

05 · BEFORE YOU BUY

The tray is supplied with its 34 labelled jars; custom labelling and the honey dipper come separately.
