Rosemary (Rosmarinus officinalis) blooms from late winter through mid-spring in the scrub and garrigue of the inland Mediterranean. The resulting honey has a very pale colour —nearly white when crystallised—, a subtle aroma with balsamic and herbal notes and a delicate flavour, less sweet than other honeys, which makes it highly valued by those who don't look for aromatic exuberance but a fine, balanced honey.
Each unit comes in a glass jar with a lid —not a single-use plastic cup you throw straight away—, and the 34 units arrive pre-set on a tray ready to display or distribute. 50 g per jar is the logical portion: enough to go with a yoghurt, sweeten a herbal tea or work as a lasting favour that the guest takes home and keeps using for days. For weddings, christenings and first communions, personalised labelling is available (on request).
Unlike honeys such as orange blossom, which stay liquid for months, rosemary honey crystallises fast: that is its natural characteristic, not a defect. In the jars you may find it with a creamy or slightly granulated texture, which is perfectly normal —and actually appreciated, because it spreads easily and doesn't drip from the knife. If you prefer it fluid for serving, a gentle water bath (never above 40 °C) for a few minutes brings it back. Keep in a cool, dry place away from direct light.
