Raw lemon blossom honey in a 900 g jar, harvested in spring by beekeepers in Alicante, Murcia and Andalusia during the lemon bloom: light, with a soft floral aroma carrying the citrus note of methyl anthranilate, and unpasteurised.
It is the honey of those who try it for the first time and come back: sweet and soft, with a light citrus touch, without the intensity of a thyme honey or the bitterness of a heather.
01 · WHERE IT COMES FROM
The lemon tree blooms in spring and the bees of the apiaries around the groves of Alicante, Murcia and the Andalusian coast work it along with the rest of the season’s flora: legumes, rock roses, crucifers such as wild rocket and composites. That is why it is a lemon honey, not a lemon extract: the citrus is in the aroma and in a slightly acid finish, not in the taste.
02 · WHAT IT IS LIKE
Light colour, between 9 and 34 mm on the Pfund scale. The aroma is faint and floral, with the note of methyl anthranilate, the marker of citrus honeys, noticed above all on swallowing. In the mouth sweetness leads, with subtle acid touches that give it complexity. It crystallises slowly and in fine crystals: if over the months it turns opaque and thick, it is no defect, it is what a honey does that has not been heated.
03 · RAW
Raw means it has not been pasteurised: it is extracted, settled and jarred. That keeps aroma and natural crystallisation; it does not make it a medicine or anything other than honey. Keep it at room temperature, closed and out of the sun, and if it crystallises it turns liquid again in a gentle bain-marie, never beyond lukewarm.
04 · AT THE TABLE
It sweetens tea and infusions without covering them, and in winter in hot milk is how it is asked for most. On toast, yoghurt or fresh cheese; in salad dressings and glazing white meats, where the citrus note helps; and in sponge cakes and biscuits, where it brings moisture and a light colour.
05 · BEFORE YOU BUY
900 g glass jar, 15 × 8.4 cm; harvested and packed in Spain. Like all honey, not recommended for infants under 12 months.
