Honey goes into the recipe at 15 %: you taste it without the sweet ceasing to behave like one. It does not replace honey nor share its properties; it is the treat that goes alongside selling honey, not a small version of it.

What lifts the basket without taking up table space

It works where honey is already on sale: beside the till, in gift hampers or as a token on apiary visits. Individually wrapped, they are handled loose and stand up to a fair far better than anything sold loose.
