The 15 % is the figure on the label; the other 85 % is confectionery. Saying so up front lets you sell them well: the customer who asks about the honey is going to ask anyway.

Honey goes in at 15 % and the rest is the sugar base. What rules here is flavour, not composition: they are sweets with honey, not a hive product.

The ingredient list and the allergens are on the bag's label, which is where they legally belong.

The jar's label becomes yours

The 2 kg format is meant for splitting into small jars, and it is worth knowing what that makes you: whoever repackages and sells answers for the labelling.

Name of the food, ingredients, allergens, nutrition declaration, lot and best-before date. The bulk bag does not carry the label of the jar you sell.

03 · HOW TO KEEP THEM

Hard candy picks up moisture

Hard candy is hygroscopic: in a damp room it turns sticky, loses its shine and the pieces weld together.

Keep them airtight, dry and away from heat, repackaging in batches.

You buy it for the format and for what you will be able to put on the label.
