01 · HEATING

The blade does not go cold on the second frame

That is the difference from an electric resistance knife: it heats up, cuts one frame and has already lost temperature by the time you start the next. Steam circulates inside the blade and keeps it hot for as long as the generator is running, so the capping is cut without dragging and the wax falls clean instead of sticking to the blade. The generator is a separate unit with its own tank: you fill it with water, plug it in and connect it to the knife with its hose.

02 · HANDLING

You set the speed, and on an uneven comb that matters

With the blade hot, you rest the frame on the stand and slide it towards you, past the knife. The feed is yours, not a motor’s: you can go slower where the comb comes out bulging or uneven and take off only the capping, something an automatic machine cannot tell apart. The stand also has safety guides for the hands, which is what keeps your fingers out of the path of the blade while you push the frame.

03 · INSTALLATION

It rests on what you already have in the honey room

It comes with no bench and no legs of its own: it is the uncapping frame, and it is set on top of an uncapping tray or straight onto an empty honey drum, which is where the cappings fall. That has two practical advantages: out of season it takes up little room — it is stored on edge, not like a piece of furniture — and you choose where the wax falls according to what you will do with it afterwards.

04 · CLEANING

Stainless steel, and here it is not decoration

Everything that touches honey is stainless steel. On a steam machine that is not showing off about materials: damp, heat and sugar together are exactly the combination that eats any other metal in two seasons. When you finish, wash it with hot water and dry it, without further ceremony. The generator body holds the electrical part, so that one is wiped on the outside and never goes under the tap.

05 · BEFORE YOU BUY

The box holds the stainless steel frame with its blade and its guides, and the 1800 W steam generator with the hose. The set weighs 10 kg. This is the 48 cm top-bar version, for Langstroth and Dadant US frames. The same machine exists in a Dadant Blatt version, 47 cm — the French and Italian size — sold separately: measure the top bar of your frames before deciding.
