The three baffles are not dividers: they are a siphon. The honey goes in at one end and has to work around them to get out, and on that journey it cleans itself.
01 · THREE BAFFLES MAKE A SIPHON
The bench carries three baffles that force the honey under and back up again. On that run the fine wax and the bubbles — being lighter — stay at the surface of each stretch, and what reaches the tap has left almost all of it behind.
The middle baffle is height-adjustable, and that is the part you tune: raise it and more is held back and settling is slower; lower it and more flows through. With thick or dirty honey you raise it; with clean honey and a deadline, you lower it.
02 · DECANTING IS A MATTER OF HEAT
The siphon works because wax and air float, and that depends on how fluid the honey is. In a cold workshop the honey thickens so much that the bubbles never reach the top and the bench cleans nothing: it only stores.
Settling runs fast with warm honey, around 30-35 °C. What you cannot do is force it: above 40 °C honey starts paying for it in HMF, a legal parameter. The catalogue carries heated settling benches precisely to hold that range without overshooting.
03 · IT IS NOT AN UNCAPPING BENCH
They get confused because both are long stainless benches. The uncapping one is where you cut the cappings and rest the frames; this one is where the honey sits after extraction.
Nothing is worked here: it is left still. The two perforated filter trays are drilled at 5 mm, coarse on purpose — they hold back lumps of wax and cappings, they do not clarify. The fine work is done by the resting.
04 · 1½” OUTLET, THE HOUSE CALIBRE
The drain is a threaded spout with a 1½” tap, that is DN 40, the calibre of the house honey line. It goes straight to Ø40 hose with the matching fitting.
The plate is thicker around the drain, which is where it rests and gets knocked. The legs are 30 × 30 mm tube at 600 mm, so it works at bucket height.
05 · BEFORE YOU BUY
Look at the temperature of your workshop. Cold, this bench stores honey but does not settle it.
