01 · THE TWO TAPS

Each one solves a different moment

The upper tap sits above the level where the impurities settle: it is there to fill buckets with honey that has already passed the mesh and had time to settle.

The lower tap is for emptying, to drain the tank at the end of the process. And with the basket removed, the same vessel works as a plain bottling tank.

02 · FILTERING AND SETTLING

The mesh takes wax out; the wait takes bubbles out

The 1 mm mesh holds back the coarse material: bits of wax, cappings, legs. It is what stops the jar reaching the customer with dark specks in it.

The rest only time can do. Freshly extracted honey carries air in it, and that air rises as a fine foam. After 24 to 48 hours standing, the foam gathers at the top and is lifted off with a skimmer; drawing the honey off earlier means bottling the foam.

03 · HEAT HAS A CEILING

40 °C, and not for comfort

Honey at 15 °C will not go through a 1 mm mesh in any reasonable time, and warming it a little is normal practice. But the limit is real: above 40 °C honey starts paying for the heat in HMF, and HMF is a legal parameter that gets measured.

As for capacity, 35 kg of honey is around 25 litres: honey weighs 1.4 kg per litre. And it is best not to fill to the brim, because the foam needs room to rise.

04 · BEFORE YOU BUY

This is a settling tank with a filter built in, not a fine filter: the 1 mm mesh removes the coarse stuff, it does not clarify.
