With this honey melter we will obtain a heating so that it liquefies the crystallized honey before packing in containers of small quantity. Crystallization depends on several factors: honey viscosity, temperature, glucose/water ratio and fructose/glucose ratio. The optimum temperature for the crystallization of honey is about 14 º C. Above 30ºC the large crystals will dissolve, which prevents the formation of the crystalline structure.
