01 · 850 MM GIVES 27 CM ACROSS

Measure the girth before ordering

The band wraps around the container, so what has to fit is the girth, not the capacity. At 850 mm long it goes round a vessel of up to about 27 cm across: small buckets and narrow containers.

A standard honey drum is over 55 cm across and needs close to 1.80 m of band. That is what the drum bands in the catalogue are for — this is the small one, and the name says so in millimetres.

02 · THE DIAL GOES TO 100, HONEY DOES NOT

You work in the first third of the scale

The thermostat runs from 0 to 100 °C and the element itself takes up to 180 °C, but that is what the band withstands, not what the honey withstands. Above 40 °C honey starts paying for it in HMF, a legal parameter.

In practice the knob never leaves the first third. The 100 °C of the range are for other uses — wax, syrups, solvents; with honey you set it low and wait.

03 · IT HEATS THE WALL, NOT THE MASS

Which is why you have to go slowly

A band passes heat by contact with the sheet metal. The honey touching that wall warms long before the honey in the middle, so with the knob high you scorch a layer at the edge while the inside is still solid.

The answer is not more temperature but less, with more time, and stirring where you can. A bucket warmed slowly comes out even; one forced comes out with high HMF and a caramel taste.

04 · WHAT IT IS FOR

The step before almost everything else

Its usual job is to leave the honey workable: fluid for bottling, for pumping, or for loading into a creamer. The cold creamers in the catalogue do not decrystallise — they ask for honey that goes in already liquid, and this band is one of the ways to get there.

It also serves to keep a container warm through a working day, which is a different thing from liquefying it from solid.
