01 · COMPATIBILITY

Which jars it fits

It closes the standard TO 63 jars in the catalogue: B212, Orcio 212, Orcio 370, A370, Square 310 ml and Hexagonal 288 ml. It does not close the deep-finish TO 63 jars — the 0.5 kg Apiari and the Aura 370 — whose necks are longer and which take the deep-skirt cap. Nor will it do for TO 77, the other common honey-jar mouth, which takes six lugs instead of four. If you keep several types in the store, check each jar's page before ordering: the difference is hard to judge by eye, and a cap that is not the jar's own will not seal however hard you turn it.

02 · THERMAL LIMIT

Thermal limit and water-bath processing

Tecnocap states pasteurisation up to 100 °C for 60 min, and sterilisation up to 125 °C by prior agreement. That figure describes what the cap withstands, not a treatment honey needs: sustained heat raises HMF and lowers diastase, so for honey the cap goes on cold. For preserves in a water bath, the seal depends on how you fit it: a new cap, enough headspace that the food does not touch the gasket, a clean rim and the cap turned only to its stop. The jars sit under at least 2.5 cm of water, the recipe sets the time, and they cool at room temperature with the cap left alone: if the centre gives when pressed the next day, that jar has not sealed.

03 · HANDLING

Handling: the seal is won before you fill

The inner compound is what seals, and it spoils without showing it: keep the caps in their packaging until use and avoid damp, dust or any weight that deforms the skirt. A cap with a knocked rim seats badly and lets air through however hard you turn it. Before filling, check that both the jar rim and the cap are clean and undented. Declared storage: +5 to +35 °C at a maximum relative humidity of 70 %, for up to two years.

FROM THE APIARY

A Twist-Off does not screw on like a bottle cap: the four lugs ride up a short ramp and the whole closure is a quarter turn. Sit it flat until you feel it settle, turn to the stop and leave it there: carrying on does not seal better, it bends the lug and leaves the jar impossible to open. If it grates or feels like the thread has stripped, lift it off and set it down again — there is no thread to strip, a lug has ridden over its ramp.
