01 · WHICH SIZE THIS IS
With a 330 mm ring and an 800 mm shaft, this is the size for narrow tanks or for working at mid height. The bigger sister has a 520 mm ring and a 1,200 mm shaft.
What decides is not the wattage: it is that the ring goes in through the opening and stays below the level of the honey.
02 · HOW IT IS BUILT
The elements are sheathed and nickel-plated for food use, on a stainless steel bar with a handle. The connection box is sealed and carries a switch and a thermostat. Two-metre cable.
They are made by a Spanish firm that has been building this kind of heater by hand for more than thirty-five years.
03 · THE RULE THAT PREVENTS THE BREAKDOWN
It goes on once it is covered in honey and off before it comes out. In the air it overheats in seconds.
And since it touches the product, you work at 35-40 °C and give it time: local heat is what caramelises honey and drives up the HMF.
