01 · 1,140 ML IS 1.5 KG OF HONEY

The conversion you have to do

Honey weighs around 1.4 kg a litre, so this jar filled to the shoulder lands at a kilo and a half. That is a perfectly good selling format, but you want to choose it knowingly.

And the other way round: a kilo of honey is about 715 ml. In a 1,140 ml jar that is under two thirds, and the gap is obvious on a shelf. For a one-kilo format, this is not the jar.

02 · IT DOESN'T STOP FERMENTATION

What a hermetic closure really protects against

Honey ferments because of the water it brings with it: above 19-20 % moisture the yeasts already in the honey get to work, and 20 % is also the legal ceiling. No jar fixes that — honey jarred wet ferments just the same behind a hermetic seal.

What the gasket does do is stop the honey gaining water. Honey is hygroscopic: in a store above 60 % relative humidity a badly closed jar takes moisture out of the air and moves towards the threshold. That is where the closure does its work.

03 · THE GASKET IS A CONSUMABLE

Maintaining the closure

The closure is mechanical: a stainless steel clip and a rubber gasket. There is no vacuum and no button to pop, and none is needed — honey is jarred cold and keeps on its own, with nothing to sterilise.

But the gasket dries out and loses its elasticity over the years and the washes. It is the part to check and replace; the glass and the clip outlast it by a long way. And bear in mind a clip closure will not take a tamper band the way a screw lid does.

04 · WHAT A BOX OF SIXTEEN WEIGHS

For working out the shipping

The 16 empty jars weigh 10 kg in a box of 44 × 43 × 18 cm: about 625 g of glass each.

With a kilo and a half of honey inside, each full jar comes to around 2.1 kg. If you sell online, that is the number that drives the shipping, not the contents.
