Small batches with work continuing outside the machine

The Pinnacle processes 2.5 kg batches in the manufacturer’s procedure. Regular production starts with creamed-honey seed and prepared liquid honey. The batch is chilled between passes, so allow enough containers and refrigerator space to maintain that routine.

This suits small batches or product trials. Each batch passes through preparation, processing and resting stages. Refrigeration capacity and batch organisation may limit production before the time spent in the machine does.

The starting honey affects the result

The Spanish manual calls for honey with less than 17% moisture, free of crystals and at 15 °C or below before processing. Measure moisture and prepare the batch before adding the seed; the machine does not correct excess water. Making the first seed follows a different sequence from production with an existing seed.

For mixtures with other ingredients, begin with small trials and assess them after resting. The machine does not remove the effects of added water or make a recipe stable simply by creaming it.
