01 · THE SIZE
It measures 12.5 × 11 × 5 cm on the outside, the size intended for the square 10 × 10 cm sections cut from comb honey frames: the comb goes in with enough room to be wrapped first, and not so much that it rattles on the way.
The board is rigid and takes stacking in the van and on the stall without denting against the comb, which is where the piece is lost.
02 · BEFORE YOU PACK
First, freeze the section for 48 hours before packing it. Wax can carry wax moth eggs you cannot see, and an infested section blows up weeks later, already in the customer's kitchen.
Second, let it come back to room temperature before wrapping: put it in the bag cold and water condenses on the cappings, leaving droplets inside the pack. Then the bag, the box and the label with floral origin, harvest and batch.
