Comb cutter with a heated 10 × 10 cm blade and adjustable temperature control, made by Pierce in the United States.
It is the cold blade that wrecks the comb, not your hand. Cutting comb honey with a room-temperature knife crushes the cells at the edge, drags wax and leaves a dirty cut. A heated blade goes through the wax melting it ahead of itself, so the edge stays clean and the comb keeps its shape.
01 · THE 10 × 10 CM ARE NOT ARBITRARY
The blade is 10 × 10 cm because that is the format of the standard containers for comb honey: you cut one piece and it goes into the tub without trimming or adjusting, which is what makes a tray of cut comb look like a shop's and not a kitchen's.
The temperature control is adjustable, and that is where the craft lies: too cold and it drags, too hot and it melts the edge so the honey runs out. You find the point on the first few pieces and then leave it there.
