01 · WHAT MEANS

Fourteen millimetres of skirt, and that is why it grips

Tall-finish jars have a longer neck than standard ones, even when the mouth diameter is the same. An ordinary TO 82 lid screws on — the diameter matches — but its skirt is shorter: it sits without covering the whole neck, the liner does not bear where it should, and the seal ends up loose or pulls no vacuum. The in the name is the 14 mm skirt height that covers that neck and brings the liner to the right bearing point. It is why this type of lid is hard to find and why it has to be ordered by its full name, not just as “TO 82”.

02 · THE LINER SEALS ONCE

For product that gets sold, a new lid

What seals is not the thread: it is the bead of liner inside, which deforms against the glass rim on the first closure and keeps that imprint. A reused lid can close perfectly and still pull no vacuum — the button does not go down, or it goes down and pops back days later. For your own use, reuse it freely; for honey or preserves going to sale, a new lid per jar. And before closing, set aside any that arrive dented or with the liner marked.

03 · THE OTHER HALF OF THE SEAL

The rim of the glass counts as much as the lid

With the best lid in the world, a chipped rim, a burr or a trace of liner from a previous closure will not hold a vacuum. Run a finger round the jar rim before filling — you feel it before you see it — and set aside anything that catches. On closing, tighten until the lid seats, without forcing: over-tightening does not improve the vacuum and can lift the liner. The vacuum is made by the hot product cooling, not by the strength of your wrist. The whole travel is a quarter turn: if it grates or feels like the thread has stripped, lift the lid off and set it down flat again — there is no thread to strip, a lug has ridden over its ramp.
