What is at stake in that joint is not a spill: it is the honey taking up moisture. Honey is hygroscopic, and a badly closed drum gains water from the air.

01 · WHAT IT REALLY PROTECTS

Moisture, before spillage

The cord sits in the channel of the lid and the lever ring compresses it against the rim of the drum. That is where the seal comes from.

And the underlying reason to look after it: honey is hygroscopic. A drum that breathes gains water from the air, and past 19-20 % moisture fermentation stops being a hypothesis. The gasket protects the number that decides whether that honey is sellable.

02 · HOW MUCH YOU NEED

The sum per drum

A 220-230 litre drum is around 60 cm across, so the perimeter is about 1.9 m. Allowing for the overlap, count on 2 metres per drum:

03 · WHICH THICKNESS

The channel decides, not preference

The thickness has to fill the channel of your lid: too thin and it never compresses, too thick and the ring will not close. Measure the channel, or measure the cord you took out.

It is a consumable: the cord takes the impression of the closure and is never the same again. Every time you open a drum to empty it, a new gasket goes on when you close it.

04 · HOW IT GOES IN

No twisting and no overlapping

Cut the length, seat it in the channel without twisting and butt the two ends together. Riding one end over the other leaves a step, and the step is where it escapes.

Then close the ring tightening evenly, not all at once from one side: the compression has to be even all the way round.
