It brings the capper and the caps, but the bottles are yours. From 3.8 litres you get about eleven third-litre bottles.

01 · WHAT COMES OUT, AND HOW MUCH

A dry chestnut mead

The result is a dry, copper-coloured mead, with notes of wet earth, eucalyptus bark and a pine background. On the palate it is light, because it finishes with little residual sugar.

That is no accident: it comes from the chestnut honey, which is dark and strong in character. With another honey the result would be another.

02 · WHAT DECIDES IF IT WORKS

Sterilise and don't overheat

The sterilising agent in the kit is not an extra: the yeasts and bacteria already living in the jar are the first cause of a spoiled batch. You sterilise everything that will touch the must, and after that the airlock lets the gas out without letting air in.

And that is why the thermometer is there: temperature decides the aroma. A fermentation that gets too warm throws notes you were not after, and one that gets too cold stalls. Follow the range in the instructions.

03 · THE RACKING

Without stirring the lees

When fermentation ends there is a bed of yeast at the bottom. The siphon draws the clean liquid from above without disturbing it: tip the fermenter and the lees go back through the lot, and the mead comes out cloudy and yeasty.

Then you bottle with the capper. The 16 caps are plenty for the eleven bottles and leave margin for the ones that bend.

04 · THE 18 MONTHS ARE THE KIT'S

Not the mead's

The approximate shelf life of 18 months is the unopened kit's — the yeast is what governs it — not that of the mead you make with it. Keep it in a cool, dry place until you get to it.

05 · BEFORE YOU BUY

It is the complete kit but for one detail:
