01 · WHAT IT SOLVES

A fine-mesh floor on the usual tray

The sheet covers the tray and acts as a second floor with the right opening: the air keeps rising between the pellets, but the grain stays where it is put and neither falls nor lodges in the metal grid. When done, the dry pollen comes off the plastic in one sweep, without rubbing and without leaving remains that later ferment. It turns a domestic fruit dryer into a pollen dryer without buying a specific one; on a Biosec (1833) the six sheets cover the trays with one spare.

02 · HOW POLLEN IS DRIED

Thin layer, warm air and no hurry

Pollen comes out of the trap at 20-30 % moisture and must go down to 6-8 % to keep in the jar. Spread it in a thin layer, one or two pellets deep, never more than 2 cm, and dry it with air at 35-40 °C: more heat darkens the pollen and takes away what it is worth. Before taking it out, a few minutes of cool air so it does not come out warm and take moisture back. If the tray is bigger than the sheet, two sheets side by side; stacking two on the same tray doubles the surface in heavy seasons.

03 · THE MATERIAL

Food-grade plastic, 0-100 °C, dishwasher

Certified food-contact plastic, free of BPA and phthalates, 228 × 346 mm: it stands 0 to 100 °C, far above what pollen needs, and goes in the dishwasher top rack. Wash before first use. Not for the oven or for dripping foods, which stay in the mesh; for wet slices Tauro has the smooth Drysilk sheets.
