The 25 cm stainless steel blade distributes heat evenly, gliding through the wax cappings without gouging the cells. Thanks to the temperature control knob, you can adapt the heat to the type of honey and the season — keep it lower for spring honeys (rosemary, orange blossom), and slightly higher for thicker honeys like sunflower, eucalyptus or heather. The secret is a warm, fluid cut without sizzling to avoid caramelization and keep HMF values low.

Field tips that make a difference:
• Preheat the knife for 2–3 minutes and test it on a side capping.
• If wax sticks, dip the blade briefly in hot water and dry it; it regains smooth glide without overheating.
• Between frames, wipe the blade with a damp cloth to remove residue and maintain clean cuts.
• Work with the blade almost parallel to the frame, letting its own weight do the cutting.
• On Langstroth or Dadant supers, long continuous strokes prevent uneven cuts; for Layens frames, short sections work best to avoid distortion.

Safety and good practice:
• Keep the thermostat set just below smoking point to prevent scorching.
• Always rest the knife on a metal stand, never on wood or plastic.
• Keep the cable clear of the uncapping tray and hot honey.
• Never wet the electrical parts; to cool, use a damp cloth on the blade only.
