Uncapping sets the pace of the whole harvest, and a cold or fixed-temperature knife has you fighting the wax: too cool and it drags and tears the comb; too hot and it "cooks" the honey along the cut. This electric knife solves exactly that — you set the blade temperature and read it on the display, so you always work at the right point for each type of wax.
Unlike fixed-thermostat knives, here you set the cutting temperature and the digital display shows it at all times. Turn the heat down for new, light-wax combs and up for old, dark comb or comb with pollen traces, which need more heat for a clean cut. Working at the right temperature —neither too little, which drags, nor too much— is what separates a cleanly sliced capping from a battered comb.
The 300 to 800 W range gives it headroom to reach working temperature in a couple of minutes and, above all, to recover it quickly as you work through frames one after another. Low-power knives cool the moment they touch cold wax and stall; with this power you keep the pace comb after comb, with no waiting between frames.

Plug it in and let it reach temperature before you start; hold the frame steady and draw the blade top to bottom, letting the heat do the work rather than forcing the edge. Set the temperature to the wax in front of you and don't overdo it: too much heat can caramelise the honey residue along the cut and raise the HMF in that area. The display is there precisely so you keep the heat under control.
