01 · SEVEN METRES

Meant for drums, not for a bucket

Worth knowing before you order: seven metres of heated cable is a lot for a 25 kg bucket. People who only work with buckets tend to say a third would have done — and for that there is the spiral element, which sits on the bottom and that is that. This one wins where there are tall narrow drums, large settling tanks or uncapping trays: coiled in a spiral or a zigzag it spreads heat through the whole mass, which is exactly what a single point of contact cannot do.

02 · THE BULB GOES UNDER

That is where the thermostat is

The detail that decides whether it works: the bulbs at each end carry the thermostat, so they have to end up inside the honey. If one is left in the air, the device reads a temperature that is not the honey's and the whole balance goes off. In dense honeys that will not let the cable sink — heather, bell heather — use a weight or a grid so it works its way down as it melts.

03 · SWITCH OFF WHEN IT RUNS

HMF rises with time, not with a scare

The thermostat stops it going past 45 °C, which is the sensible ceiling for not punishing the honey. But what ages honey is temperature and time together: the longer it stays warm, the more HMF rises and the more diastase falls. So as soon as the honey runs, switch it off. As a field reference, two 25 kg buckets come out liquid in about four hours — and yes, it is slow on purpose.

04 · BEFORE FIRST USE

Wash it and run it dry for 20 minutes

New silicone smells, and that smell transfers if you put it straight into honey. The manufacturer sets a running-in: wash with water and neutral soap, plug it in for 20 minutes and rinse well. After that, look after the material — do not bend it into a sharp angle, do not leave it lying across itself and do not cut or scrape it: if honey gets into the silicone, the cable stops working. Clean it while the honey is still warm, when it comes off by itself.

05 · BEFORE YOU BUY

The temperature is fixed: it cannot be regulated. And it is 7 metres of heated cable — if you are only decrystallising the odd bucket, the spiral element is easier to handle.
