01 · WHICH HONEY IT HANDLES

Fluid yes, even thick; crystallised no

First thing to know. The pump moves fluid honey and copes well with dense honeys that are hard to pour — but it cannot handle crystallised honey: it is not a matter of pressing harder, it simply will not rise up the tube. If your honey has already set, soften it with gentle heat before fitting the dispenser. With honeys that crystallise fast, this accessory is for the jar you are using now, not the one that has spent months in the pantry.

02 · PRIMING

The first strokes give no honey, and that is normal

When you fit it, tube and pump body are full of air. You have to pump several times empty until honey has travelled the whole circuit; with thick honey that can take many strokes and it feels as if the thing is broken. Once primed, it delivers steadily. Check too that the tube is pushed firmly home: if it sits loose, the pump draws air and never primes.

03 · THE JAR AND THE TUBE

Two finishes, and an extension made for wide jars

Pick it by your jar's finish: the TO 77 + TO 66 combination or the TO 82 + TO 66 one — both also include the half-kilo lid. The extension tube supplied suits the wide, low 1 kg jar; in a tall narrow jar it falls short of the bottom. There is a known fix: replace it with food-grade tubing of 10 mm inner diameter cut to your jar. And to reach the last of it, just tilt the jar, since the hole in the lid is centred.

04 · BEFORE YOU BUY

Check your jar's finish before choosing: the lids are not universal, and jars from other markets — French ones, for instance — do not always match the twist-off standard used here. After use, take it apart, wash it and dry it thoroughly before storing.
