Cold honey creaming machine for 30 kg batches, with a 36 rpm paddle and a cycle timer, for fine-grained creamed honey one bucket at a time. The small one of the range: no heating, plugs into 230 V and carries by its handles.
Creamed honey has nothing added: it is controlled crystallisation, so the crystal comes out fine and the texture spreadable. This machine provides the slow, repeatable movement; the cold comes from the room.
01 · CREAMING
All honey crystallises; what decides between gritty and buttery is the size of the crystal. You start with runny honey, add 5-10 % finely crystallised creamed honey as seed and let those microcrystals act as a template for the rest, at around 14 °C, which is where the crystal grows small. What the creamer adds is spreading that seed evenly through 30 kg without working air in, batch after batch.
02 · CYCLES
The stainless steel paddle turns at 36 rpm, driven by a 180 W, 230 V gearmotor: the speed for dragging a dense mass up from the bottom, not for whipping it. The digital timer on the lid sets the run time, the pause and the number of cycles, and repeats the recipe unattended. That is what creamed honey asks for: 15-20 minute runs, two or three times a day, over several days. Stirring continuously shortens nothing: it warms the honey through friction and aerates it, and the air rises in the jar as white foam.
03 · NO HEATING
The drum has no jacket and no heating element: it does not liquefy set honey. You fill it with liquid or semi-fluid honey, which moves on its own at 20-22 °C; if it comes set, soften it first with a heating band without going past 40 °C. The seed is never added warm: the microcrystals would dissolve and the batch recrystallises coarse. Once jarred, the honey finishes setting in the jar: the first days at about 14 °C, which in summer means a cool room or a cold store.
04 · THE DRUM
The vessel is a SAF stainless steel bucket for 30 kg, in 0.6 mm sheet with two rubber-coated handles, 31 cm across and 46.5 cm high. The 1½″ (6/4″) plastic valve sits flush with the bottom, so the creamed honey, which does not run, comes out entirely into the filling machine or the jar without tipping anything; if you prefer a drip-free gate, the size is the same as the SAF honey tanks. The transparent lid lets you watch the mass without stopping the cycle, and it is washed with warm water and mild soap: alcohol and harsh cleaners craze the plastic.
The maker also proposes it for honeys with additions —freeze-dried fruit, cinnamon, ginger—. Mind the labelling: with anything more than honey in it, it can no longer be sold as "honey"; it is another product name.
⚠ PRECAUTIONS
No hands or tools in the drum while the paddle is turning; unplug before cleaning. If the motor's thermal cut-out trips, the mass is too stiff or too cold: temper it rather than resetting again and again. Honey equipment: it does not melt wax.
05 · BEFORE YOU BUY
Thirty kilos are about 60 half-kilo jars per batch: the format for whoever creams rosemary, orange blossom or lavender monoflorals for direct sale and wants to repeat the texture, not guess it.
