01 · 520 W HOLD, THEY DO NOT HEAT

The sum nobody publishes

Warming 270 kg of honey by twenty-five degrees needs on the order of four kilowatt hours in the product alone, before counting what escapes through the walls. At 520 W that is more than eight hours, and in practice a good deal more.

The consequence is one of handling, not of quality: the tank is meant to hold honey that already arrives warm and keep it fluid through the packing day. If it goes in cold, switch it on the evening before.

02 · 30-55 °C BELONG TO THE APPLIANCE

The honey has its own ceiling, and it is 40

The adjustable thermostat and the digital control cover 30 to 55 °C. That range describes what the appliance does, not what suits the product: above 40 °C the HMF rises and the diastase falls, and both are parameters in the analysis.

Since thermal load is temperature times time, in a tank where the honey sits for days the temperature weighs twice what it does in a filter it merely passes through. The sensible thing is to work at the low end of the range and switch it on only when packing; holding 270 kg warm just in case is the expensive way to raise the HMF of a whole harvest.

03 · 200 LITRES, ABOUT 270 KG

And what fits under the valve

At 1.4 kilos a litre, 200 litres to the brim would be about 280 kg; the maker gives 270 kg as the working capacity, which is what fits leaving a reasonable filling margin.

The body is 83 cm tall by 70 across, the base is cylindrical and the stainless valve sits flush with the floor so it empties without leaving a bottom. The handles are cold-metal, meant for moving it with the tank warm, and the lid has a knob.
