Details of Honey Drum 200L stainless steel

200 litre drum in AISI 304 stainless steel, with a lever-ring closure and rubber gasket. Holds on the order of 280 kg of honey.

It has no tap: it fills from the top and empties from the top. It is a storage vessel, not a bottling tank, and that decides what it is for.

01 · WHY STAINLESS

Honey is acidic

Honey sits at a pH of 3.5 to 4.5, and that attacks ordinary steel. Metal drums painted inside hold up while the paint is intact; the moment a chip comes off, the rust spot appears and the metallic taste with it.

AISI 304 removes the problem at the root: it does not corrode, it transfers no flavour and it takes a thorough wash. Inside it is smooth, with no folds for residue to sit in.

02 · THE CLOSURE AND THE DAMP

That is why the gasket matters

Honey is hygroscopic: it absorbs moisture from the air. A badly closed drum in a damp store keeps gaining water at the surface, and above 18-20 % moisture honey ferments and the batch is lost.

The lever-ring closure with its rubber gasket is what prevents that: quick to open and close, and sealed when shut. It is not a convenience, it is the keeping.

03 · 280 KILOS DO NOT MOVE THEMSELVES

And crystallised, even less

Full it weighs on the order of 280 kg. That calls for a drum trolley, or a pallet and a pallet truck, and storing it on a pallet rather than on the floor, where the damp condenses.

And there is a decision to take before filling it: if the honey crystallises inside, getting it out needs a warm cabinet or a drum melter. A 200 l drum is for honey you will move within the season, or for accepting that it will have to be liquefied.

04 · BEFORE YOU BUY

It comes with no tap and no extras: the drum, its lid and its closing ring. To bottle from it you need a pump or a tipper.
