An uncapping knife does not cut because it is sharp: it cuts because it is hot. Cold, it tears the wax away.

Uncapping knife with a smooth edge on both sides, a 285 mm blade and 395 mm overall. Stainless steel 420, 1.8 mm thick, with a wooden handle.

01 · SMOOTH OR SERRATED

What each one is for

The blade is smooth on both edges, and that is its ground: light wax and well-built comb, where it takes the capping off in one clean pass.

On an uneven or bulging comb it slips; a serrated blade works better there. Plenty of people end up owning both.

02 · HOT WATER

Two knives, one in and one out

The method is old and effective: two knives, alternated, one cutting and one in the water. The hot one melts the capping as it passes rather than dragging it.

And the rule that never fails: heat it in water, never over a flame. Fire burns the honey on the edge and ruins the temper.

03 · THE SIZE

Twenty-eight centimetres of blade

At 285 mm the blade reaches right across a Dadant or Langstroth brood frame without attacking the comb in two goes, which is where the steps come from.

It weighs 132 g and the handle is flat, to rest the thumb on and guide the cut without cramping your hand.

04 · BEFORE YOU BUY

It is a hand tool, and as such it asks for upkeep:
