01 · THE TEMPERATURE

The lower, the better the pollen

The machine adjusts from 35 to 70 °C, but pollen dries below 40-45 °C. Above that you lose aroma and degrade what makes pollen valuable; the only thing you gain is haste.

It is the same rule that governs all pollen handling: thin layer and gentle heat. More temperature does not dry it better, it dries it worse and faster.

02 · THE FIVE TRAYS

And why they have to be rotated

Each tray is about 28 cm across and 4.5 cm high, with a nylon mesh. Use them together or separately, depending on what you have to dry.

If you stack them all, swap their positions halfway through: the lower ones get more heat and finish first. And spread the pollen in a thin, even layer, which is what lets the air circulate.

03 · WHEN IT IS DRY

There is no fixed time

Neither capacity per tray nor drying time is a single figure: both depend on the thickness of the layer and the starting moisture. Pollen harvested on a damp morning does not take the same as pollen from a dry afternoon.

Before packing, let it cool and check it is completely dry. Then an airtight container — pollen takes moisture back out of the air with astonishing ease.
