10-hydroxy-2-decenoic acid is the marker exclusive to royal jelly: it appears in no other hive product, and its percentage is what tells an intact jelly apart from a diluted or badly kept one. This one declares a 1.4% minimum. It is the figure to ask for every time, and the one worth comparing when two jellies look alike in everything but price.

And that is why it travels cold

This is fresh jelly: it has not been freeze-dried, so it keeps its water and its original texture — and its fragility too. That is why it ships in a polystyrene box by express service, and why dispatches leave Monday to Wednesday: an order placed on Thursday waits for the following Monday rather than spend the weekend in a depot. On arrival, into the fridge straight away, and do not freeze.

03 · WHY BUY A KILO

Packing and queen rearing

The one-kilo format has two buyers. The packer, who divides it into small jars for consumption — with the cold chain unbroken throughout. And the queen rearer, who uses it to prime the cups before grafting: it is diluted with water and a drop placed in the bottom of each cup, which is what improves larval acceptance. For a household, a kilo is a great deal of jelly: there are small formats in the same range.
